So my husband is out and about shooting things for a few days. He's enjoying himself. Had a nice talk with the Plt Sgt involving deployment and other interesting topics. He'll be home sometime this week and maybe we'll have a few days off in July. No one knows. They had a July schedule...now they don't. Lol. So during my alone time I decided to make some yummy stuff. I like yummy stuff. Although I am quite certain that I'm going to turn myself into a blimp in the next three months. Lol. Life goes on. So I made myself some homemade Vanilla Pudding. I didn't take a picture since it was quite boring and...off-white. =D Plus my husband has stolen the camera so that "I can see the fun things they do." Awesome. But here is the recipe, super easy and way yummy. I followed it to the letter surprisingly except for tempering the egg mixture before I added it so I didn't have scrambled eggs.
Creamy Vanilla PuddingINGREDIENTS
- 2 1/2 cups milk, divided
- Pinch salt
- 1/2 cup sugar
- 3 tablespoons cornstarch
- 2 egg yolks
- 1 teaspoon vanilla extract
- 1 tablespoon butter or margarine
DIRECTIONS
- Place 2 cups milk and salt in a saucepan. Sprinkle sugar on milk and do no stir; heat over medium-high. Quickly combine cornstarch with remaining milk; add egg yolks and mix well. When milk comes to a full boil, remove saucepan from the heat (This is where I tempered the cornstarch mixture out of paranoia) and stir in cornstarch mixture. Pudding will begin to thicken. Return to the heat and cook for 1 minute. Remove from the heat; stir in vanilla and butter. Pour into individual dishes. Serve warm.
